After spending the beginning of the week in Memphis, TN for work and eating quite poorly while there (fried catfish, bbq ribs, pulled pork, and tiramisu) I was craving a real home cooked meal with fixins. So last night, I whipped up chicken saltimbocca (chicken breasts pounded out with prosciutto and fontina cheese - normally sage leaves would be there as well but my crappy local store had none), stuffing and corn with a couple slices of fresh Portuguese bread. YUM! My girl told me that "Daddy, you make the best dinners...I love you." So gosh-darn sweet.
